Anisos is the last born wine in the collection, just as is their daughter Anisia, the youngest of three children. It is also one of the very exciting prospects of the future, since Eugenio is already producing in vineyards up to 800 m.a.s.l. and scouting for more plots. Anisos 2007 is a blend of 20% Chardonnay, 20% Nosiola and 60% Pinot Bianco, partly fermented in open wood vats with skin maceration.
Then the wine matures in 5hl oak barrels for 18 months. No sulfur is added and no filtration takes place. For this reason, its particularity is “anisos”, or different.
Very fresh nose even when the wine is at room temperature. It has a natural sulfur note. There are notes of neutral balsamic wood with a smoky air, citrus, orange juice and a steely quality. The color is golden yellow, the structure hazy but not troubled nor cloudy. A ripe drippy type of pear comes to mind. Talcum chalk breath coming off warm stone (similar to Mosel slate). The mineral comes through stronger the longer the bottle is open, with nostril penetrating stone mineral. This is a wine with lots of grape sugar powder, yellow plum, herbal notes tending toward chamomile, wild medical herbs. The stone mineral gives a cumin association. The stone dust even gives a slight association to white pepper which is not aggressive. Perhaps a light dandelion. Troughout the wine remains aloof as if winged. Also gooseberry. Anisos is very dry but juicy, beautifully complex, includes teeth crunching mineral, and mandarin.
