The Otin Fiorin Piè Rupestris Nebbiolo selection is the American rootstock grafted part of the Otin Fiorin 3.5ha plot in the Gabutti grand cru. Grapes are harvested in October.
The wine ferments spontaneously. Not even a pied de cuvee is used. There is no temperature control. The process of vinification is traditional, i.e. long macerations in glass-lined cement vats and bottle, large Slavonian oak, chestnut and acacia barrels. The wine matures for a minimum of three years in old bottle. It is neither clarified nor filtered.
The Rupestris parcel renders a full wine, with persuasive colour and great aging potential.
Gabutti Rupestris gives a warm, spicy character, port-like feel, an aftertaste with big tannins, dry but pleasant and a very nice juicy fruit acidity finish.
Rupestris is important due its honest expression of a great Nebbiolo in Serralunga. A full-bodied wine with rustic tannins shows earthy character with truffle notes. The Barolos of Serralunga are known for their generosity and warmth, and Barolo Rupestris is a classic.
